Coconut Flour Bacon Biscuits

What’s a bacon biscuit you might ask? Well, it’s only the most devilish thing to ever come out of a “healthy” cookbook.

They’re tasty but definitely no low in calorie, but they are low-carb due to the coconut flour.

The recipe:

  • 4 eggs
  • 1/4 cup bacon drippings
  • 1/4 TSP salt
  • 1/3 cup +3 TBSPs sifted coconut flour
  • 1/4 TSP baking powder
  • 6-8 strips crisp bacon
  • 1/2 cup cheddar cheese

Cook your bacon first. Don’t pour out the bacon grease and drippings because you’re going to be using that for the recipe.

Next blend together the eggs, bacon drippings and salt.

Sift together the coconut flour and baking powder. Stir into the egg and bacon drippings mixture until there are no lumps. Let the batter sit for a few minutes to thicken.

Fold in the bacon and most of the cheddar cheese.

Put on a greased cookie sheet in big spoonfuls. Sprinkle the remaining cheddar cheese on top of each biscuit.

Bake at 400 degrees Fahrenheit for 15 minutes.

Make sure you liberally coat whatever pan you are using. Coconut flour likes to stick.

These are quite a tasty breakfast item. This recipe could be altered to include sausage instead of bacon. Turkey bacon could be used as an alternative, but it won’t give off the amount of drippings that pork bacon will. You could also omit the cheese or choose a different type of cheese.
