Don’t know what spaetzle is? Well, I guess it’s a type of pasta, well that is what is says on the bag anyways. Actually, our commissaries have recently, over the past three months, started carrying this German pasta called spaetzle. We like to try new things so we got some. This stuff is just awesome in chicken noodle soup by the way. It’s a very eggy pasta, and when you boil it, it really plumps up. So it’s quite nice.
The last time we bought this pasta there was a recipe attached, so I decided that I would try it.
- 12 oz Spaetzle
- 3 cups cheese(cheddar, gouda, swiss, whatever you want really)
- 2 TBSP butter
- 2 onions
That is all the ingredients. It’s very simple.
Here is a note on kitchen scales, if you do not have a kitchen scale, get one. They are inexpensive and some recipes are much better when you weigh ingredients rather than measure them in cups. Get yourself one that isn’t electronic, because that way it always works even if your power happens to be out.
Boil your pasta. Put the butter and onions in a pan and cook them until the are carmelized. Carmelized does not mean burnt, it means browned. Onions have sugar in them. It’s a natural sugar and when you cook them long enough that sugar carmelizes and makes your onions taste all wonderful. That is how you prepare you onions for French onion soup in fact. So don’t burn your onions, just brown them.
Put a TBSP or two in your baking dish (2 qt size) and melt it either in the oven or in the microwave(if you have a microwave safe dish).
Put about a third of the pasta in the dish, then layer with a third of the cheese, pasta, cheese, pasta cheese. Then once it’s all layered , put the carmelized onions on top and bake in a 325 degree fahrenheit oven for 15-20 minutes.
I have to say it tastes quite good, although it has a ton of fat. I am glad my husband ate most of this. The carmelized onions really taste great with the pasta and cheese. I can really see some crumbled bacon in this recipe, that is if you wanted to add even more fat. The recipe is kind of like a modified mac n’ cheese recipe. I am sure this recipe would work equally as well with spaghetti noodles or some other pasta, but then it wouldn’t be cheese spaetzle it would be cheese(insert pasta name here). Overall, it’s a quick and easy recipe that is on the comfort food side.
